Our Sockeye Nuggets are marinated 48 hours with low brine content and sugar, then smoked utilizing Alder and Maple wood for 12 hours. To prevent the fat from exploding we slowly raise the temperature then blast the heat to 63 degrees celcius for 17 minutes, called the kill step required by C.F.IA. Pure Maple Syrup is added when packaged. you can taste the layers of flavour with every bite!
